Origins

The large basal leaves were once used in Germany to flavor wine and give it a musky taste. It was also used in England to brew beer as a hop substitute. Clary sage, widespread in southern France, is cultivated there for the perfume industry, where it is used as a base note, a fixative, or as a heart note in fougère-type accords.
In Corsica, having sage in your garden is a true blessing. "Salvia," the one that "saves," is as valuable in cooking as it is in aromatherapy. A biennial to perennial plant, growing to a height of 1 to 1.5 meters, it self-seeds readily.


Thanks to its hormone-like, antispasmodic, and nerve-relaxing properties, clary sage can help young girls, mothers, and mature women at every stage of their lives. Traditionally, it is associated with the image of the strong woman. Clary sage essential oil has properties similar to those of female hormones.
